It is always delightful for adults and children to unwrap a Cupcake! Here is a humble little chocolate cupcake recipe that has a life of its own. But you do not have to buy this cupcake at the bakery. Make your own at home with this old-fashioned cream-filled recipe for a brownie-like cupcake, covered with butter cream frosting.

Children love to make this great snack after school. They are perfect for bake sales, PTA meetings, etc. This is an ancient Iowa chocolate cupcake recipe.

CREAM FILLED CHOCOLATE CUPCAKES

2 1 / 2 cups Unsifted flour
2 cups sugar
1 teaspoon baking powder
Of cocoa 1 / 3 cup
Salt 1 / 4 teaspoon
2 eggs
1 cup vegetable oil
1 cup buttermilk
1 teaspoon vanilla
2 teaspoon baking soda
1 cup hot water

Preheat oven to 350 degrees.

Sift the flour, sugar, baking powder, cocoa and salt in a large bowl. Add eggs, oil, butter, vanilla and the baking soda that has been dissolved in a cup of hot water. Mix well. Prepare 36 cupcake tins with cupcake liners. Fill each liner approximately 2 / 3 full. Bake in oven at 350 degrees for 20 minutes or until done. Remove from oven and cool for 15 minutes. Then fill with cream stuffing using a pastry bag with large rosette tip attached. Force the cream into the center of the cakes. Next frost with butter icing or sprinkle the tops with powdered sugar, if desired.

CREAM FILLING:

Sugar 1 / 2 cup
Milk 1 / 3 cup
Shortening 2 / 3 cup
Salt 1 / 4 teaspoon
1 tablespoon water
1 / 2 teaspoon vanilla
1 / 2 cup powdered sugar

Combine sugar, milk, butter, salt, water and vanilla in a bowl and beat on high speed with electric hand mixer for 7 minutes. Add powdered sugar and continue to beat for another 5 minutes.

Karen's Butter Frosting

1 cup butter
Sugar 1 1 / 2 cups powder
1 / 4 cup evaporated milk
Pinch of salt
1 / 4 cup almond flavoring

In a medium bowl, mix shortening, powdered sugar, milk and salt. When the mixture is well blended, add the almond flavoring (or vanilla, if you like). Beat on high speed for 5 minutes. This icing will frost a cake, cake sheet or from 24 to 36 cupcakes. Add food coloring, if desired.
