What brand of milk chocolate to be used in baking?

I am making a soufflé and it calls for milk chocolate. What brand should I buy? In addition, if I use dark chocolate, what brand should I buy?

There are, of course, many good milk chocolate and dark chocolate products to choose from. The fun of cooking is to do some experimenting. You might try the Ghirardelli Milk Chocolate Baking Bar. Hershey's has a variety of chocolate baking products to choose from. I have never been very fond of Nestle so unless you are desperate - there are many better choices.

For anyone who is baking a lot of pastries, pies, cakes etc that call for baking chocolate, you can purchase large blocks of chocolate. For example, check out Callebaut Milk Chocolate Baking Block (11lb.).
